140 grams almonds
280 grams cashews
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon sea salt
2 tablespoons coconut oil
2 tablespoons maple syrup
2 tablespoons coconut butter
1 teaspoon vanilla extract
1 tablespoons butter
Topping:
300 grams dark chocolate
1 tablespoon butter
1 tablespoons cacao
Put all the ingredients in a blender and blend. Once blended, put in a mixing bowl and add all the wet ingredients and mix with your hands until you can form a ball. In a lined muffin tray, divide up the mixture and press them down using the back of a spoon. Put the tray in the freezer. Melt the chocolate and butter together in a heat-proof bowl above a pot with simmering water. Take out the tray from the freezer and spread the chocolate on top of the cups and put back in the freezer. Rest for 30 minutes, then they are ready for snacking. Energy balls can be stored in the freezer or a tin once they have sat in the freezer overnight.
